I've been here now 15 years and in that time, I've seen the hotel transform into this spectacular Waldorf Astoria.
We're standing in the magnificent Peacock Alley, which was the original train platform
and railway track from the creators, The Caledonian Railway Company.
Our Peacock Alley clock was salvaged from the great fire of Princes Street Station in 1890.
We now have the new addition of the Roll of Honour, discovered in 2015 by two concierge members
cleaning out an upstairs cupboard, surprisingly.
Here at The Caledonian are two restaurants.
Our Galvin Brasserie de Luxe and our Pompadour restaurants are overseen by Jeff and Chris Galvin,
Michelin star awarded chefs.
Galvin Brasserie is great for a business lunch or
for a Sunday meeting with family or friends, or for dinner in the evening.
Our fine dining restaurant, our award-winning The Pompadour, has been a part of the history of
The Caledonian since it opened in 1903. Madame Pompadour was the favourite mistress of Louis XIV
and that restaurant very much is a romantic restaurant, offering up views of the castle.
It's one of the most romantic dining rooms in Scotland.
Here at the Waldorf Astoria, it's very much a personal service. The feeling of homeliness is second to none.
At The Caledonian, we are very fortunate to have the Guerlain Spa - the only Guerlain spa in the UK -
offering our guests bespoke treatments created with that knowledge of Guerlain.
