Inspired by the 1930s, the menu features local game including elk, pheasant and rabbit alongside more contemporary offerings of seafood, meat, and poultry. Select the Chef’s tasting menu or choose from the à la carte menu, which evolves to reflect the seasons. The Chef’s Garden, set outside the Dining Room, provides a sense of inspiration and freshness to the cuisine. Iconic dishes such as The Waldorf Salad, created in 1893 in the original Waldorf=Astoria sit beside the updated 1929 version from the Arizona Biltmore. Classics are reimagined with a modern flourish, creating refined plates of traditional favorites.
